3/14/2024
(March 12, 2024 - Hour Two) 10:14pm - You typically find the guest leading off the 2nd hour during the Embedded Correspondents segment on the 4th Tuesday of the month, but Doug Scheiding of Rogue Cookers turns around quickly to do an in-depth segment about this rib business he got into. The 2023 BBQCS podumentary subject, owner of the shortly defuncted but now back open Smokin Joe's Pit BBQ, Joe Martinez. As the recap would indicate, Joe Opened a food truck in El Paso, TX, got RAVE reviews from everyone who ate there, made the Texas Monthly "Best New BBQ Places" in released in 2023, closed his food truck 2 weeks ago (for like 38 minutes) and then re-opened by the same weekend...what is going on here?? Bone Meat Is Better? Is There A First Method Of Southern Style BBQ?

3/13/2024
(March 12, 2024 - Hour One) 9:14pm - Stop me if you've heard this one before: "Meat closer to the bone has more flavor". Indeed, it's a statement made by many folks year after year but what kind of truth actually sits behind those words. Tonight we will get the real information to this statement and see if it holds water or not. Meathead from Amazingribs.com joins me to go in-depth on this topic. We will discuss where the saying came from, what bone is and does, how it does or does not impart flavor and if we need to drop this saying from the American lexicon of live-fire cooking. 9:35pm - After Meathead, I will be joined by our pal, Robert Moss. Topic tonight: Evolutions of different cooking methods in Southern Style BBQ. Seems like a pretty tame subject, but be prepared to be blown out over the information that is going to be shared during this segment tonight. If it's half as good as last month's segment, you're in for a BBQ lesson you won't soon forget. I’ve known Chris for nearly 20 years…in fact, when I trace back to my beginnings of BBQ…not the show…just getting into the cooking portion…Chris Finney is one of the core group of guys I still know to this day. You know who else is in that group…believe it or not…Diva Q!!Anyway, one of the most popular ways to cook a steak or roast…especially thick ones…is the reverse sear…and in this segment…Chris Finney lays claim to inventing this way of cooking steaks back in early 2008!! He gives his background in cooking, talks about books he’s read on cooking…and then tell you how he came up with this method…Jon actually asks everyone at the end of the show “Do you think this guy is the one that invented it”...and I’ll ask it differently. When you hear the show Friday…is there any reason we shouldn’t believe that Chris Finney is the rightful inventor of “The reverse sear” aka…the Finney Method? (February 20, 2024 - Hour Two) 10:14pm - Owner of Owl's Nest BBQ Supply Store, Steve Ray, joins me to recap the HPBExpo that took place in Nashville last week. Steve made the trip up last Wednesday and walked the show, took some pictures, met some folks and will tell us his thoughts on this year's convention. I am happy to have Steve back in the folks and look forward to his take on the event, especially since I went to the one in Nashville last year so we can compare notes! 10:35pm - Coming out of the bullpen tonight is someone who has been a guest on the sow before, but has worn a different uniform. A Better Grill Brush; Forgotten Cuts/Styles of BBQ

2/13/2024
(February 23, 2024 - Show Notes) 9:14pm - Meathead, from Amazingribs.com, leads off tonight, as he normally does during the 2nd Tuesday of the month, and we are talking about the recent rash of articles written by reputable websites/news outlets that are promoting the "poke your beef to tell when it's done" method vs using any other tool. This is bad information and we are here to put a stop to it. Meathead also thinks The BBQ Central show has an identity problem...we'll discuss. There are other topics as well, like the guy eating raw chicken every day until he gets a tummy ache...he loves that guy! 9:35pm - After Meathead, Robert Moss will join me in his monthly segment and tonight, we start an 11 month journey of going over many detailed BBQ topics that you may or may not know too much about. Tonight, we are discussing cuts of protein that aren;t the normal BBQ that you hear about everyday. Were there lesser known cuts that were the king of the BBQ back in the day? What happened to them and why did they fall out of favor? What about lamb? These are going to be great segments for the balance of 2024 and this kick off topic is going to be great! Malcom Remains Uncommitted; Katina Eats Kilos Debuts Tonight!

2/6/2024
(February 6, 2024 - Hour One) 9:14pm - Welcome to February and welcome back to Malcom Reed from How To BBQ Right and Killer Hogs competition team. Tonight we will re-visit a topic from about 4 years ago. Back in 2020, Malcom was in the middle of getting a new competition trailer built to better accommodate their needs at that time. Through a listener request, I will ask Malcom to rate the overall experience now that there are years behind us, how the trailer has worked out, what changes he would make to it in 2024 if he was ordering a new one and much more. We will also get into some Super Bowl recipes for this coming weekend, who he likes in the game and if he's given any more thought on what BBQ event to do in May as the days draw closer! 9:35pm - The "new guest" train continues to roll into February, and tonight, I am so excited to welcome "Katina Eats Kilos" to the show. Will this be a full BBQ related segment...no. However, she has just moved to Nashville, so there will be some local BBQ talk. Most of the interview will go over how she got into becoming an eating professional and how she has leveraged YouTube to grow her brand and business. If you are not familiar with Katina, you will want to go check her out to see the kind of nonsense (I say that with peace and love) she's pulling off during these eats. Browsey Acres Wagyu & Bartz Barbecue Both Make Their Debut !

1/31/2024
(January 30, 2024 - Hour One) 10:14pm - We stay with the beef talk but switch out of "craft beef" and jump into some Wagyu talk with the co-owner of Browsey Acres, Travis Browne. For the MMA fans out there, you would know Travis from his days in UFC, Strikeforce and other MMA sanctioning bodies as a heavyweight fighter. Tonight we will learn how a world class fighter goes from the octagon to the pastures as he and his wife look to build a sustainable wagyu farm business to bring you the highest quality, most nutrient dense meat available in the market. Outside of the beef, they are also selling farm raised chickens to give you an alternative to the consumer grade option you normally find in the grocery stores. 10:35pm - Coming out of the bullpen tonight is a first time guest, BBQ caterer, BBQ pop up business owner and is knee deep in "The BBQ Wars" of Los Angeles where he has been exposing others in the space for over-charging, Dustin Bartz of Bartz Barbecue. We will talk all about that, how he got started in BBQ in the first place, how he is able to operate the way he does and what his future plans are for his BBQ business. Oh, he also seems to be dominating the BBQ social media game on Instagram recently, so we'll talk to him about that as well.
