Once Upon A Time In France - Mel Arnt

Mel Arnt is living the American Dream. Mel moved from France to Nashville in 2016 to pursue a career in music. Very quickly, Mel realized he didn't want a career in music and decided to pursue a career in entrepreneurship. There were no authentic French wine bars in Nashville. So Mel made it his goal to build one himself. But before he opened his wine bar, Mel decided to get break into the Nashville hospitality industry with a classic French bistro, that he called Once Upon A Time In France. He opened that concept in 2019 with his Dad as the head chef, making it a true family business. When the covid pandemic hit, Mel was bored with his restaurant closed so he decided to get to work on the wine bar he dreamed up a few years back. Within a few months Mel had opened 2 new bars. Authentique Wine Bar and Overlord. Mel continues to dream big, recently opening a wine & spirits shop and starting his own vineyard on his farm property in East Nashville. Anzie Blue - Marcie Allen Van Mol & Chef Star Maye

In this episode, Anzie Blue Co-Owner Marcie Allen Von Mol and Executive Chef Star Maye join the show! Anzie Blue started as a CBD shop in West Nashville, being forced to pivot to a restaurant to keep the doors open when the pandemic hit in 2020. In order to be deemed an essential business allowed to operate, Anzie Blue had to start serving food and drinks. Despite having no background as a chef or running a restaurant, Marcie bought a George Foreman Grill and coffee makers and taught herself how to make breakfast tacos and brew coffee. Their CBD shop turned coffee & breakfast shop quickly turned into a neighborhood hit. When an opportunity came up in the fall of 2020 to relocate to a bigger spot in Hillsboro Village, they made a commitment to turn the CBD brand into a full scale restaurant. In 2021, Marcie hired a new kitchen staff including team member Star Maye. Star quickly proved to be... well, a star! Very soon after, Marcie named Star Executive Chef. Chef Star Maye has rebuilt the entire culinary program at Anzie Blue into an all day brunch menu that features Southern favorites from family recipes. Including a Chicken Pot Pie for 2, based on her grandmothers personal recipe. The duo of Marcie and Star continue to bring fun new ideas to the community, including a monthly Drag Brunch which is the hottest brunch ticket in Nashville, a new Sunday Gospel Brunch series, constant menu innovation and much more! Ladybird Taco from Nashville, TN joins the show! In this episode, business partners Gabe Scott & Brooks Veazey share their vision for brining Austin, TX style breakfast tacos to Nashville. Growing up in Michigan, Gabe had never had a breakfast taco before he traveled to Austin on tour during his music career. Instantly, he was hooked and when he returned to his new home in Nashville he couldn't find any like he had in Austin. This started a nearly 10 year journey to turn the idea of bringing breakfast tacos to Nashville, into a reality. Despite navigating the challenges of figuring out how to open a restaurant in the middle of a pandemic, the restaurant has quickly become a local favorite in Music City. Brooks brings years of operational experience scaling businesses to Ladybird Taco. He is helping to lead the plan to turn Ladybird Taco into a breakfast taco empire across the entire South, with more spaces soon to come in Nashville, Birmingham and beyond. Rony Stark owner of PennePazze is on a journey to open 100+ PennePazze locations across America. The Italian inspired pizza and pasta restaurant in Nashville just celebrated their 2 year anniversary of their 1st location and is set to begin scaling it's operations with it's 2nd location opening in Murfreesboro, TN in late 2022. From the beginning, the former basketball player from the professional Israel National Basketball League set his sights on building one of the largest Italian inspired restaurant brands in the United States. Since the spark for the idea in 2012, Rony has meticulously built the framework for his American dream. He spent years developing the business plan and model, before even turning his attention to developing a menu. Which by the way, is as authentic Italian food as it gets. Rony spent time in Italy at culinary schools that specialize in authentic Italian pizza and pasta. Their head pizza chef is from Italy, too!
