Katie Karberg MD, PhD: COVID-19 & Food Safety Under Pressure

Should I keep my groceries in the car for 3 days? Can I boost my immune system through food? How does keeping your groceries on the porch for 2 hours in the sunlight kill COVID-19? These are just a few of the questions I've received related to Coronavirus and food safety. In order to gain a better understanding about food safety and COVID-19, I sat down with Katie Karberg, a physician scientist. Dr. Karberg is a Medical Sciences Lead in Regulatory Scientific Affairs at Bayer Crop Sciences, based in St. Louis, MO. Her background is in medicine (M.D.) and microbiology (Ph.D., with an emphasis in microbial evolutionary genomics, especially understanding how genes in microbes move and evolve to cause disease). In her current role, she works with teams across the organization to assist with human safety strategy for pipeline projects. She also engages with members of the public, especially those in the medical and scientific communities, on the intersections of agriculture and health. Outside of work, she loves spending time with her family (husband and 3-year-old daughter) and being in the outdoors, including gardening, hiking, and biking. During this episode, I spoke with Dr. Karberg about how consumers can stay healthy under pressure while grocery shopping, grabbing takeout or preparing food at home during the pandemic. It was the spark that ignited his passion for broadcasting. On that day, the familiar face of Peter Jennings relaying the accounts of the event in a composed and professional manner helped a scared and confused boy cope with the chaos surrounding him. John Henry Müller makes things that make people happy. He is an independent designer with 18 years of professional experience. He helps his clients with brand/product strategy, experience design, and visual design. Before going independent, John Henry worked as a Design Director at Hudl. At Hudl, he focused on visual design spanning both product and brand design, with a team of over 30 designers. John Henry led the visual direction of Uniform (Hudl's design system). Before Hudl, John Henry was the design cofounder of a startup called Pack. Before that, he founded a design/dev consultancy called What Cheer. John Henry lives in Benson, Omaha, Nebraska with his wife, two daughters, dog, and two cats. He sits on the board of Maha—a conference and music festival. Jenna Braddock MSH, RDN, CSSD, LD/N, ACSM-CPT is a sports dietitian, trainer, business owner, educator, wife and mama. She owns two websites: MakeHealthyEasy.com which has a mission to share real life strategies for better health and fitness, and OffSeasonAthlete.com which exists to provide teen athletes and their parents with science based, credible training information to help them perform at their best now and into their future. She is also a nutrition and movement coach at the Johnson & Johnson Human Performance Institute where she helps people from around the globe reach their full potential. Most importantly, she is married to Brian a head high school football coach and spends a lot of time investing in the team, and is a mom to two boys, ages 5 and 7, who keep her life wild and very fun. She enjoys gardening, interesting red wines, outdoor adventures and her family. Previously, Sara was the Head of Global Communications and Marketing at Monsanto. In her role, Sara led her team in driving the development and execution of proactive internal and external communications and marketing strategies to support the company’s reputation and license to operate. This included the global strategies for executive and thought-leadership communications, employee communications, media relations, financial and M&A communications, technology communications, digital and content marketing. Prior to joining Monsanto in 2009, Sara worked at Anheuser-Busch in St. Louis. How do consumers stay healthy under pressure when it comes to food safety and pesticides? What exactly is the dirty dozen? During this interview, I sat down with Bill and Shawna to help answer these important questions and learn how this power couple stays healthy under pressure. About Bill.... Bill Reeves is the Global Health and Safety Issues Management Lead for the Agricultural Affairs and Sustainability team within Bayer’s Crop Science division. He earned his BS in biology from the University of Missouri and his PhD in toxicology from Texas A&M University. He has been with Bayer (initially Monsanto) since 2007, first in the Biotechnology Regulatory Affairs team making and defending regulatory submissions for drought tolerant corn and insect protected soybean. In 2014 Bill joined the Regulatory Policy and Scientific Affairs team as the Crop Protection Safety and Outreach Lead. In this role he was responsible for scientific outreach with academics, regulators, and the public about Bayer’s crop protection products. His current focus is on ensuring the accuracy of scientific information regarding the health and safety of products produced by Bayer’s Crop Science division. Prior to joining Bayer, Bill worked as a water quality regulator with California’s Environmental Protection Agency and as a human health and environmental risk assessor for a private consulting firm. About Shawna... Dr. Shawna Lemke leads Food Safety, Health and Nutrition Stakeholder Affairs as part Bayer US Crop Science’s Agricultural Affairs and Sustainability team. In this role, Shawna works with companies, food and health professionals, NGOs and other stakeholders across the food system on topics related to innovation in agriculture, safety, nutrition and environmental sustainability. Shawna has over 15 years of experience in product safety and nutrition in the agricultural and pharmaceutical industries. She has held roles in managing pre-clinical and clinical phases of drug development, and conducting nutritional and food safety evaluation of products. She led the clinical program to establish the nutritional value of soybean oil containing the omega-3 fatty acid, stearidonic acid (SDA). Prior to her current role, Shawna led the Toxicology and Nutrition Center at Monsanto, with oversight of human safety evaluation for crop protection chemicals and crops developed through biotechnology. Shawna was born in Southern California and raised in rural Wisconsin. She attended the University of Wisconsin- Green Bay and received a B.S. in Chemistry with a minor in Environmental Sciences. Kelly Bristow RD: Teamwork Under Pressure

Kelly Bristow is a Registered Dietitian who connects food and nutrition professionals with agriculturalists to create advocates and defenders of modern agriculture. She manages Bayer’s L.E.A.D. Network of dietitians promoting the science behind tools like pesticides and gene editing in today’s food supply. Kelly’s background includes one-on-one counseling in an out-patient setting, nutrition education, and school food service. Her enthusiasm for agriculture grew while working as Nutrition Educator with St. Louis District Dairy Council where she worked alongside dairy farmers supporting teaching consumers about the benefits of dairy. Kelly’s passion continued to grow while working with a local school district supporting child nutrition through school meals. Kelly directed the school district’s farm-to-school program where she educated students and members of the community about where food comes from, how food is grown, and the importance of eating more fruit and vegetables. Kelly and her husband live in the city with their three year-old son, Ben. She enjoys cooking, spending time outside, or taking advantage of all the great things the city has to offer! Brian Klintworth - Financial Health Under Pressure

When most middle schoolers dream about what they want to be when they grow up, they have ideas that are often far different from where they end up. That wasn't the case with Brian Klintworth, who decided in middle school that he wanted to be an accountant. Fast forward about fifteen years, Brian is now a CPA at HBE LLP in Lincoln, where he specializes primarily in tax and consulting work. His background growing up around small businesses in Seward helped him realize that those are the kinds of clients he really enjoys serving. Brian may not be an entrepreneur himself, but he works with a quite a few at his job. He loves pretty much everything to do with accounting and enjoys talking about accounting and helping business owners understand their accounting, make the appropriate tax-related decisions, plan effectively for the future, and think through financial decisions.
